Friday - Enchurritos Verdes and salad- $36

(5-5.5servings)

Delicious low-fat ground turkey and flavorful refried (not exactly refried) black beans made from scratch and cheddar cheese wrapped in whole wheat tortillas with more cheese and green sauce on top.  You take it home, pour the sauce over top and bake in the pan for 30 minutes at 350 degrees.  It's the halfbreed of Burritos and Enchiladas! Yuuuuuuuuuuuuum!

Salad+ 2 dressings

(4-5 small servings)

Mixed Baby Greens, Spinach, Crumbled Feta, Small pieces of red onion, Toasted Walnuts, Avocado, and sliced Fresh fruit for a sweet balance.

Monday Soup (Vegan) Lentil Barley and Morel Mushroom- $24 for (2) 32. oz

Just got WILD morel mushrooms from Oregon!

High fiber and high taste! Slight tomato base with carrots, celery, and little potato. Topped off with Italian parsley.  


Monday Macro Meal (Vegan) -  $35 

2-3 Servings          

Low-Sodium, High-Fiber, All required servings of vegetables.  How healthy can you be? 

Short Grain Brown Rice, Kale, Carrots, Squash, Mung Bean Sprouts, Hijiki seaweed salad, Baked Tofu or Grilled Tempeh Squares. Also included is several secret dressings that you can drizzle over everything. One small dessert sweetened with fruit, brown rice syrup, 100% maple syrup, agave, molasses, or sucanat.

This will give you 2 full dinner-portion servings.

Spritz with water and Re-heat in oven with a lid at 350 degrees for 8 minutes.  Let the cool portion (mung beans, tofu, hijiki) come to room temperature, or eat it cold.
